Barley Salad

- 1 can chicken broth shopping list
- 1-1/3 cup water shopping list
- 1 cup barley shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 2 tablespoons salad oil shopping list
- 3 tablespoons red wine vinegar shopping list
- 1 large clove garlic peeled and flattened shopping list
- 1 cup diced green pepper shopping list
- 1/2 cup red onion diced shopping list
- 1/4 cup chopped fresh dill or 1 tablespoon dried dill weed shopping list
- 1/4 cup chopped fresh parsley or 1 tablespoon dried parsley flakes shopping list
- 1 stock of chopped celery shopping list
- 1 chopped red pepper shopping list
- 2 chopped radishes shopping list
How to make it
- In a large pan bring broth and water to a boil then stir in barley and reduce heat.
- Simmer covered on reduced heat for 45 minutes.
- Combine salt, pepper, oil, vinegar and garlic together and let stand for 15 minutes.
- When barley is cooked remove garlic from dressing.
- Pour dressing over barley mixing well.
- Add green pepper, onion, dill, parsley, celery, red pepper and radishes
- Mix all ingredients together and serve hot or cold.
