Vermont Baked Beans

- 1 lb. dried navy beans(about 2 c) shopping list
- cooking spray shopping list
- 1-1/2 c chopped yellow onion shopping list
- 1/2 c diced salt pork (about 4 oz) shopping list
- 5-1/2 c water shopping list
- 11/2 to 3/4 c maple syrup (I use 1/2 c) shopping list
- 1-1/2 TB Dijon mustard shopping list
- 1 tsp salt shopping list
- 1/4 tsp tobasco sauce shopping list
How to make it
- Sort and wash beans;place in large bowl. Cover with water to 2" above the beans;cover and lert stand 8 hours or overnight.
- Preheat oven to 325'
- Heat dutch oven over med-high heat. Coat pan with cooking spray. Add onion and pork to the pan,saute 5 m. Add beans,water,1/4 c syrup,mustard,salt and pepper sauce,bring to boil. Cover and bake for 2-1/2 hours or till beans are tender,stirring occasionally.
- Uncover and bake an additional 30 mins or till mixture begins to thicken. Stir in remaining 1/4 c syrup.
