Easy Individual Berry Cobblers

- Filling: shopping list
- 1 cup fresh or frozen raspberries shopping list
- 1 cup fresh of frozen blueberries shopping list
- 3 tbs white sugar shopping list
- 1 tsp vanilla extract shopping list
- lemoncello liqueur shopping list
- Crumb topping: shopping list
- 1/4 cup butter shopping list
- 4 tbs brown sugar shopping list
- 3/4 cup oatmeal shopping list
- 1 tsp cinnamon shopping list
- 1 tsp nutmeg shopping list
- lemon Cream: shopping list
- 4 oz mascarpone cheese shopping list
- 1/2 cup half & half shopping list
- 1/8 cup lemon curd shopping list
- 1 tso lemon juice & some zest shopping list
How to make it
- In a med. bowl, combine all ingredients for tart and whip until thick. Place in the freezer until ready to serve.
- In a small bowl, cut butter into brown sugar, oatmeal, cinnamon and nutmeg
- In a separate bowl, mix berries, sugar and vanilla
- Spoon filling into cupcake pan (I used a disposable aluminum pan)
- Top each one with a spoonful of crumb mixture
- Drizzle lightly with lemoncello
- Bake at 325 for 20 minutes or place on the grill over med heat until berries are bubbly. See Photo
- Broil for only a few minutes to brown topping
- Serve over a scoop of the frozen lemon cream.
