Glutenless Grains Chocolate Cake

- 100 grams black (or red) quinoa grains shopping list
- 1 1/4 cups water shopping list
- 35 grams toasted buckwheat groats (kasha) shopping list
- 1/4 cup ground flaxseed shopping list
- ½ cup hot coffee shopping list
- 2 tbsp ener-g egg replacer shopping list
- 3/4 cup cool water shopping list
- 1/3 cup almond or coconut milk shopping list
- 1 tbsp vanilla shopping list
- ½ cup canola oil shopping list
- 2 tbsp agave nectar shopping list
- 3/4 cup brown sugar shopping list
- 1 tbsp agar agar flakes (optional, helps with binding) shopping list
- 1 cup unsweetened cocoa shopping list
- 1½ tsp baking powder shopping list
- ½ tsp baking soda shopping list
- 1/4 tsp nutmeg shopping list
- ½ tsp salt shopping list
How to make it
- Preheat the oven to 350°F. Lightly grease two 8" cake pans and line with parchment paper.
- Place quinoa in a seive or strainer and rinse well under cool running water to remove the "soapy" coating. See Photo
- In a saucepan, bring water to a boil and add the quinoa and kasha. Reduce heat, cover and simmer 20 minutes. Set aside.
- In a small dish, mix together the flaxseed and coffee, set aside. In another small dish combine the egg replacer and cool water, set aside.
- In a food processor, mix the cooked quinoa and kasha, almond milk, vanilla, oil, agave and brown sugar See Photo. Blend until smooth.
- Add the flaxseed and egg replacer mixtures and puree completely.
- Whisk together the agar agar, cocoa, baking powder, baking soda, nutmeg and salt.
- Add to the food processor and pulse in until thoroughly mixed.
- Bake 40 - 45 minutes, until tests done
- Cool completely in the pan.
- Can be frozen.
