How to make it

  • Preheat oven to 400 F
  • Place paper muffin tin liners in pan
  • Combine flour, salt, baking powder and sugar in large bowl.
  • In a 1 cup measuring cup, combine 1/3 cup oil, egg, and enough milk to top off the 1 cup (about 1/3 cup)
  • Add to flour mixture and mix to combine
  • Gently fold in blueberries (defrost first if using frozen berries)
  • Spoon batter into muffin tin, filling each tin to the top
  • In a small bowl, combine sugar, flour, cinnamon and nutmeg for crumb topping.
  • Cut in butter.
  • Top each muffin with a spoon full of topping
  • Bake for about 20 minutes, until golden brown and a toothpick comes out clean.
  • Enjoy!
