Ingredients
  • 2 cups flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1-1/2 tablespoons white sugar
  • 1/4 cup chilled lard cut into small pieces
  • 1/3 cup light cream
  • Water if needed

Directions
  1. Preheat oven to 450.
  2. Sift flour, salt, baking powder and sugar together.
  3. Use a fork to cut the lard into the flour until it looks like coarse meal.
  4. Using a standing mixer or a wooden spoon mix dough as you slowly add the cream.
  5. Mix well to form the dough into a ball adding water if needed.
  6. Place the dough onto a tabletop and knead slightly.
  7. With a mallet or a one piece rolling pin beat dough a few times to form it into a rough rectangle.
  8. Fold dough over then beat it out again.
  9. Repeat this process until the dough becomes white and blisters form about 15 minutes.
  10. Roll out dough to 1/4" thick.
  11. Cut into 2 inch rounds and prick top a few times with the tines of a fork.
  12. Place on greased baking sheets and bake for 15 minutes.
