Simple Spinach

I was looking for a warm spinach side dish that didn't use cream or bacon, and this is what I came up with. Now, it is one of my family's favorites, and great for a busy weeknight side-dish.
Ingredients
- 1 clove garlic, thinly sliced shopping list
- 2 Tbs. pine nuts shopping list
- 1/4 C. (approx.) olive oil shopping list
- 5-6 large hand-fulls of fresh baby spinach shopping list
- salt and freshly ground pepper to taste shopping list
How to make it
- Add sliced garlic and pine nuts to a large. wide skillet.
- Drizzle with enough olive oil to lightly cover the bottom of the pan.
- Heat over medium heat.
- Cook, stirring frequently, until the garlic and pine nuts have a light golden color.
- Add spinach (some at a time) until all is in the pan. Season with salt and pepper.
- Stir and cook until spinach reaches desired tenderness.
- Serve immediately.
