How to make it

  • Using a food processor, chop vegetables separately.
  • Chop up the onion into bite size small pieces
  • Chop garlic finely
  • Chop seeded cut up bell peppers like the onions
  • Chop up the parsley and cilantro
  • Chop up the cut up seeded tomato
  • Mix all together in a large bowl
  • Stir in some olive oil and season to taste.
  • Chill well.
  • Note: I don't saute this recipe , I use it fresh
  • When serving, use a slotted spoon to dish out the sofrito because some liquid does remain in the bottom of the bowl or container
  • This freezes well
