Fresh Garden Sofrito

- 3 large green bell peppers shopping list
- 3 large red bell peppers shopping list
- 1 large meaty tomato shopping list
- 1 med sweet onion shopping list
- 1 small bunch of fresh parsley shopping list
- 1 small bunch of fresh cilantro shopping list
- 2 garlic cloves or more to taste shopping list
- 1- 2 tsp ground cumin or to taste shopping list
- kosher salt to taste shopping list
- fresh grated black pepper to taste shopping list
- Chipolte chili powder to taste shopping list
- 1/4 cup olive oil shopping list
How to make it
- Using a food processor, chop vegetables separately.
- Chop up the onion into bite size small pieces
- Chop garlic finely
- Chop seeded cut up bell peppers like the onions
- Chop up the parsley and cilantro
- Chop up the cut up seeded tomato
- Mix all together in a large bowl
- Stir in some olive oil and season to taste.
- Chill well.
- Note: I don't saute this recipe , I use it fresh
- When serving, use a slotted spoon to dish out the sofrito because some liquid does remain in the bottom of the bowl or container
- This freezes well
