Harissa Grilled Chicken And Vegetables

- 2 large chicken breasts shopping list
- 1 tbsp olive oil shopping list
- 1 tbsp harissa shopping list
- 1/2 tsp dried thyme shopping list
- pepper shopping list
- 2 cups broccoli florets shopping list
- 1 large bell pepper, any color, cut into 1" strips shopping list
- 1 medium red onion, cut into small wedges shopping list
- About 2 cups summer squash, cut into 1/2" rounds shopping list
- 1 tbsp olive oil shopping list
- salt & pepper shopping list
- 1 tsp za'atar shopping list
- lemon juice shopping list
- olive oil shopping list
How to make it
- Preheat lightly greased grill pan (or grill) over medium-high heat.
- Pound chicken breasts to about 1/2" thickness
- Mix harissa, 1 tbsp oil, thyme and pepper and brush onto chicken pieces
- Grill chicken for about 4 minutes each side (reduce heat slightly). Remove chicken and set aside.
- Meanwhile, toss vegetables with olive oil, salt & pepper. Add to grill pan, in batches if necessary (you wantthem in a single layer to cook evenly) and grill about 5 minutes, turning occasionally, for about 5 minutes.
- Cut chicken into 3/4" slices and add to veggies in pan. Add za'atar and cook, stirring or shaking, to incorporate some of the harissa flavor onto the veggies.
- Garnish with a squeeze of lemon juice and drizzle of olive oil and serve.
- NOTES:
- Harissa is a spicy North African condiment - the one I used was prepared and contained hot peppers, smoked paprika, roasted red peppers, preserved lemon and spices such as coriander and cumin. There are many variations. Za'atar is a Middel Eastern spice blend - mine was thyme, sesame seeds and salt (from MySpiceSage.com), but often other herbs are represented, such as sumac.
