How to make it

  • Preheat lightly greased grill pan (or grill) over medium-high heat.
  • Pound chicken breasts to about 1/2" thickness
  • Mix harissa, 1 tbsp oil, thyme and pepper and brush onto chicken pieces
  • Grill chicken for about 4 minutes each side (reduce heat slightly). Remove chicken and set aside.
  • Meanwhile, toss vegetables with olive oil, salt & pepper. Add to grill pan, in batches if necessary (you wantthem in a single layer to cook evenly) and grill about 5 minutes, turning occasionally, for about 5 minutes.
  • Cut chicken into 3/4" slices and add to veggies in pan. Add za'atar and cook, stirring or shaking, to incorporate some of the harissa flavor onto the veggies.
  • Garnish with a squeeze of lemon juice and drizzle of olive oil and serve.
  • NOTES:
  • Harissa is a spicy North African condiment - the one I used was prepared and contained hot peppers, smoked paprika, roasted red peppers, preserved lemon and spices such as coriander and cumin. There are many variations. Za'atar is a Middel Eastern spice blend - mine was thyme, sesame seeds and salt (from, but often other herbs are represented, such as sumac.
