- 2 Tbs olive oil shopping list
- 1 Medium Red onion, diced shopping list
- 1 1/2 Tsp sea salt shopping list
- 4 cloves garlic, diced shopping list
- 2 Cups vegetable stock shopping list
- 2 Cups water shopping list
- 1 Cup cornmeal shopping list
- 2 Oz Parmesan shopping list
- 3 Tbs butter shopping list
- ground black pepper to taste shopping list
- If you choose, you can use chicken stock instead. shopping list
- If so, use 4 Cups stock and no water. shopping list
How to make it
- Preheat oven to 350 F
- Put Olive Oil in an oven-safe skillet over medium heat. Add Red Onion and Salt, cooking for ~4 minutes.
- Add Garlic, cooking for ~2 minutes.
- Turn heat to High and add Stock & Water, bringing to a boil.
- Whisk in Cornmeal slowly to avoid any large lumps. Cover the skillet and place it in the oven.
- Bake for ~35 minutes, stirring with the whisk every 10 minutes.
- Add Parmesan, Butter, and Pepper, stir well and serve immediately.
