The Perfect Blueberry Muffin

- 3/4 cup melted butter shopping list
- 2 cups all purpose flour shopping list
- 2 large eggs shopping list
- 1/2 cup whole milk shopping list
- 1/2 tsp vanilla shopping list
- 3/4 cup granulated sugar + a little extra for sprinkling on top of muffins shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp kosher salt shopping list
- 1 1/2 cups blueberries - fresh or frozen (I haven't tried frozen yet) shopping list
How to make it
- Preheat oven to 375. Butter and flour a 12 cup muffin tin or use muffin liners.
- Mix dry ingredients (four, sugar, baking powder, salt) with a whisk.
- In a separate bowl, mix wet ingredients (melted butter, eggs, milk, vanilla) together with a whisk.
- Add wet ingredients to dry and mix until combined. Do not over mix.
- Fold in blueberries.
- Fill muffin cups and sprinkle tops with a little granulated sugar.
- Bake 15-20 minutes.
- Loosen muffins and tip them on their sides to cool in the pan.
- Sometimes this makes 15 muffins, sometimes 12. Not sure why, I use a little scoop so it should all be the same.
