How to make it

  • Add a little EVOO along with butter to a small dutch oven.
  • Add bacon and cook until crisp. Reserve bacon to a plate to cool.
  • To the bacon fat in the bottom of the dutch oven, add onion and cook until soft.
  • Add garlic and cook for 30 seconds.
  • Add flour and cook until flour is no longer raw.
  • Add stock slowly to roux; stirring continuously. Bring to boil.
  • Add potatoes, both corn, s and p, and seasonings.
  • Cook 10 minutes or until heated through.
  • Turn down heat to simmer.
  • Add enough milk or half and half to make creamy.
  • Add cheese and stir until melted.
  • Add reserved bacon.
  • Ready to eat!!!
