Creamy Cheesy Corn Chowder

- 1 Tbsp EVOO and 1 Tbsp butter shopping list
- 5 slices of bacon shopping list
- 1 medium onion, diced shopping list
- 1 tsp minced jarred roasted garlic shopping list
- 3 Tbsp AP flour shopping list
- 1/2 box of veggie or chicken stock shopping list
- 1 can of diced potatoes shopping list
- 1 can whole kernel corn shopping list
- 1 can creamed corn shopping list
- S and P shopping list
- 2 pinches of thyme, garlic powder to taste, onion powder to taste, 2 tsp dried parsley or spinach and herb (Tastefully Simple), 2 pinches Splenda, and nutmeg to taste shopping list
- milk or half and half shopping list
- 8 oz cheddar, shredded shopping list
- Garnish with smoked paprika or with fresh chives. shopping list
How to make it
- Add a little EVOO along with butter to a small dutch oven.
- Add bacon and cook until crisp. Reserve bacon to a plate to cool.
- To the bacon fat in the bottom of the dutch oven, add onion and cook until soft.
- Add garlic and cook for 30 seconds.
- Add flour and cook until flour is no longer raw.
- Add stock slowly to roux; stirring continuously. Bring to boil.
- Add potatoes, both corn, s and p, and seasonings.
- Cook 10 minutes or until heated through.
- Turn down heat to simmer.
- Add enough milk or half and half to make creamy.
- Add cheese and stir until melted.
- Add reserved bacon.
- Ready to eat!!!
