How to make it

  • Heat olive oil in a large skillet over medium-high heat.
  • Brown the chicken until cooked trough.
  • Add the peppers and onions and saute until cooked to desired tenderness.
  • Add broccoli and cashews and heat through.
  • Add Hoisin sauce and mix thoroughly.
  • Serve over cooked rice topped with sliced green onions.
  • Note: To make this a lower-carb dish, steam some cauliflower and press through a ricer to make cauliflower "rice".
