Thai Chicken Noodle Soup

- 1 tbsp oil shopping list
- 4 breast chicken, diced shopping list
- Handful of chopped spring onion shopping list
- 2 cloves garlic shopping list
- 1 inch ginger, grated shopping list
- 1 onion, diced shopping list
- 1 1/2 pint chicken stock shopping list
- 400g light coconut milk shopping list
- 3 tbsp thai green curry paste shopping list
- 3 tbsp peanut butter shopping list
- 2 tbsp light soya sauce shopping list
- 1 green pepper, chopped shopping list
- Handful of frozen peas and mangetout shopping list
- 2 sheets noodles shopping list
How to make it
- Method:
- 1. Heat oil in saucepan and fry chicken for 5 mins
- 2. Add spring onions, garlic, ginger and onion and fry for 2 mins
- 3. Add chicken stock, coconut milk, curry paste, peanut butter and soya sauce, boil for 8 mins. Add salt and pepper to taste
- 4. Add remaining ingrediants and simmer for 4-5 mins.
- 5 Serve up! :)
