How to make it

  • The artichoke should be chopped finely as should the scallions. The olives you must slice them thinly. Mix all the ingredients except for the cheese together.
  • Mix the garlic into the oil and brush the pita loaves with it. Season them with the rigani, salt and pepper. It is best to grill them on a flame grill, but lacking that, cook them in a hot iron skillet or the something.
  • Spread all the ingredients over the bread saving the cheese for last. Put them under a broiler for 1-3 minutes to finish. Cut in quarters and serve at once.
  • Of course the possibilities are fairly limitless. Of note here are just two more:
  • The LAMBY: Make this in a like manner as above only use as topping, thinly sliced sautéed red onion, sautéed spinach, grilled marinated lamb sirloin and aged feta cheese.
  • THE SQUIGLY: Make this as above only spread a thin layer of a sauce made from pureed roasted red peppers and sundried tomatoes first on the bread. The remaining toping are from grilled marinated octopus, thinly sliced green olives, chopped scallions and a shredded Kasseri type cheese.
