Mushroom Soup

- 450g of sliced fresh mixed mushrooms shopping list
- 1litre of vegetable stock shopping list
- 1 clove of garlic shopping list
- 2 tbsp. of butter shopping list
- three large potatoes diced shopping list
- 1 sliced onions shopping list
- 1 sliced leeks (optional) shopping list
- 2 sticks of sliced celery shopping list
- 1 tsp. of fresh thyme leaves shopping list
- salt and pepper to taste shopping list
How to make it
- First add butter to a pot over medium flame.
- Saute the garlic, onions, leeks, and the celery.
- Now cook this until they are tender approx. 10 min.
- Next stir in the thyme and mushrooms and cook approx. 5 min.
- Then pour in the stock and season, add the potatoes.
- You will want to cook this over low flame for approx. 30 min.
- Blitz with hand blender
- Ladle into serving bowls and serve!
- Green onions and labne are great on top!
