Grilled Red Snapper With Creole Sauce

- Grilled Red Snapper: shopping list
- 1 whole fish (clean and gutted ) if possible otherwise fish fillet shopping list
- chilies crushed (optional) shopping list
- Virgin coconut oil shopping list
- garlic paste shopping list
- ginger paste shopping list
- lime juice shopping list
- Soy sauce shopping list
- tomato sauce shopping list
- Salt- to taste shopping list
- Pepper- to taste shopping list
- CREOLE SAUCE FOR FISH: shopping list
- 1kg fresh tomatoes shopping list
- 1 onion sliced shopping list
- 1 sachet of bouquet garni or fresh herbs shopping list
- 6 tsps coconut oil shopping list
- salt shopping list
- pepper shopping list
How to make it
- For the Grilled Fish:
- Score the whole fish .Blend all the spices together and insert in the slices of the fish or simply baste the fish fillet in the sauce and leave to marinade in the fridge.Add some more oil on the fish to help it marinade better. Grill the fish in the oven or on a BBQ grill. Turnover regularly to ensure both sides are cooked evenly.
- For Creole Sauce:
- Heat oil in pan. Stir in onions and tomatoes until really soft. Add some water, bouquet garni or the freshherbs. Cover and simmer until the sauce reduces. Add salt and pepper to taste.If sauce is too thick let it reduce some more and if sauce is too dry add a little more water. Serve with grilled fish.
