How to make it

  • 1. Heat the oil gently(and a blob of butter, if you are OK with dairy) in a 2 litre saucepan.
  • 2. Add chopped, washed broccoli florets, thin slices of the broccoli stalk, and the cleaned chopped leek.
  • 3. Sweat the vegetables for about 5 minutes, until soft.
  • 3. Add the crushed garlic and sweat for another 2 minutes.
  • 4. Pour in the hot stock and simmer the soup for another 12 -15 minutes - until the broccoli is tender.
  • 5. Remove pan from heat, and blend soup with a hand-blender or cool it slightly and blend in a food mixer.
  • 6. Now add the Marmite and the bag of washed spinach (pick off the stalks if they are tough) to the soup and blend quickly again. The spinach will wilt without needing to boil the soup again.
  • 7. Serve in warmed bowls, with a splash of yoghurt for contrast and hot pitta breads.
  • 3 green veggies in one quick dish and it tastes good.
