Healthy Nachos With Blue Corn Tortillas

- 3 blue corn tortilla (not the fried chips) shopping list
- vegetable oil spray shopping list
- sea salt shopping list
- 1/4 to 1/3 cup rice-based cheddar flavored cheese (or you can use real cheese, I just can't eat dairy these days), grated shopping list
- 2 sliced green onions shopping list
- 1/3 cup cooked shredded chicken breast or thigh (or opt for no chicken for vegan; quite delicious either way) shopping list
- salsa to taste shopping list
How to make it
- Pre-heat oven to 400º
- spray a cookie sheet with vegetable oil spray (I use a silpat)
- cut tortillas into 6 wedges each
- arrange tortillas on cookie sheet in a single layer
- lightly spray with more vegetable spray
- sprinkle with sea salt
- bake for about 5 or 6 minutes at 400º, on the middle rack, until crisp
- layer on a glass plate: 9 tortillas pieces, half the cheese, half the chicken, and half the green onions, then add another layer of the same.
- microwave for 60 to 90 seconds or until cheese is melted
- top with salsa
- YUM!
