Eggplant Parmesan

- eggplant--use one large or 6 to 10 small ones or a combo of all! shopping list
- Slice in even widths. shopping list
- 1/2 cup eggbeaters shopping list
- 2 teaspoons pizza seasoning(Frontier) shopping list
- 3/4 cup flour shopping list
- 1/2 teasp. salt shopping list
- onion powder shopping list
- dried basil shopping list
- 2 Tablespoons butter shopping list
- 2 Tablespoons flour shopping list
- 1/2 cup broth (chicken, beef, veggie) shopping list
- 1/2 cup milk(soy, cow, goat, sheep, rice, almond, V-8 spicy) shopping list
- 3 slices soy mozzarella, cut in small pieces shopping list
- Parmesan(house-brand shaker) shopping list
- 1 jar marinara sauce shopping list
- handful fresh basil shopping list
- tomato large or 2 smaller, diced shopping list
- garlic, minced shopping list
- 1/2 cup fresh mushrms shopping list
- 1 cup grated mozzarella(soy) shopping list
How to make it
- "Unfried Eggplant"
- Preheat oven 375. In a shallow dish, combine the eggbeaters and pizza seasoning. In a plastic bag or a dish, combine the flour, salt, onion powder, dried basil. stir to combine. Dip the sliced eggplant into the wet and then into the dry. Place in one layer on a pam-sprayed baking sheet. Bake 15 -20 minutes, When browning, and softening, turn over for 10 - 15 minutes. Set aside.
- "Cheese " Sauce a la microwave Use a 2 or 3 cup capacity container. I use a pyrex measuring cup.
- Melt 2 T. butter in microwave, and whisk in flour 1 T. at a time , insuring smoothness. Zap until it boils for 1 minute. Whisk in broth and zap for 1-2 minutes, bringing once again to a boil. Whisk in the milk or juice. and repeat the zap 1-2 minutes to a boil. As it boils, the liquid level reduces. When thickened and creamy, stir in the pieces of cheese. Taste to correct seasoning. I threw in a few shakes of parmesan to reach tastebud goodness. Set aside. It thickens more as it cools.
- Assembly
- In a casserole dish with a 3 cup volume capacity, dollop marinara at the bottom , next some fresh basil and garlic. Now the eggplant rounds, grated cheese. A drizzle of the cheese sauce. Another eggplant layer and marinara sauce , and fresh tomatoes and mushrooms here and there and keep layering until the ingredients are en casserole. Cover. Bake in a 350 degree oven about 40 minutes when starting to bubble. Uncover for about 10 minutes. Serve with a green salad.
