Pita Panzanella

- five mini wheat toasted pita breads shopping list
- 1/2 of red pepper, diced shopping list
- 1 bunch of green onion, cleaned and sliced shopping list
- 1/2 cup of cherry tomatoes, halved shopping list
- 1/2 tsp of oregano shopping list
- 1/2 tsp of dried mint, crumbled in your fingers shopping list
- 2 tbsp of red wine vinegar shopping list
- 2 tbsp of olive oil shopping list
- 1/3 cup or more of crumbled feta shopping list
How to make it
- Toast the bread slightly.
- cool
- quarter pitas
- toss with veggies
- dress with vinegar and oil
- sprinkle with herbs
- toss with feta
- grind some fresh pepper over all
- stir and let the dressing soak into the pita
- serve it up and dig in.
