How to make it

  • In a medium bowl, whisk together the coconut oil, agave, cacao and salt.When the chocolate is smooth, add the walnuts and coconut to the bowl.Mix well to coat all of the nuts and coconut.
  • Use a spoon to create small clusters
  • Place onto a wax paper lined baking sheet.
  • Freeze 30 minutes or until the chocolate has hardened.

    Fabulous! 10 stars! These "Cocoa Clusters" are like truffles. I needed to sub agave with honey because that is what I had on hand. I used MAISON ORPHEE organic REFINED coconut oil (FLAVORLESS) because my husband does not like the taste of coconut oil. I made mine the shape of my meat baller (yield: 16) and rolled them in cocoa (as per LindaLMT’s photo). Mine held together without freezing (possibly because I missed the instruction to melt the coconut oil) so I just popped them in the fridge.I weighted my own ingredients so I can make it in metric next time (easier): coconut oil (55 g); honey (75 g); cocoa (30g); walnuts (110 g); and flaked coconut (53 g). Thank you stormy_ide_girl 7 for sharing your recipe and LindaLMT for the inspiration to make them.

    Who said chocolate isn't healthy? because this recipe certainly is! and it's delicious! I used raw cacao instead of cocoa. Raw cacao is more nutritious because it's not roasted like cocoa is. I used maple syrup instead of agave and probably used only about 1 tablespoon which was plenty sweet enough for my taste. I did manage to roll the clusters into balls (I chopped the walnuts) … will leave some plain and roll others in cacao before eating. Thanks Stormy for sharing such a wonderful recipe!
