The Best Chocolate Cake

- 2 cups sugar shopping list
- 1-3/4 cups all-purpose flour shopping list
- 3/4 cup unsweetened cocoa powder (Dutch cocoa powder is the best) shopping list
- 2 teaspoons baking soda shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon kosher salt shopping list
- 2 eggs shopping list
- 1 cup fat-free plain yogurt shopping list
- 1 cup cold black coffee shopping list
- 1/2 cup canola oil shopping list
- 2 teaspoons vanilla extract shopping list
How to make it
- Heat oven to 350°F. Line your pan(s) of choice (two 9-inch rounds OR one 13x9x2-inch rectangular OR one 9x9-inch square) with parchment paper. Set aside.
- In the bowl of a stand mixer sift together the sugar, flour, cocoa, baking soda and baking powder, and add salt. Stir to combine thoroughly.
- Add eggs, yogurt, coffee, oil and vanilla. Beat on medium speed using paddle attachment for about two minutes; the batter will be thin.
- Pour batter evenly into prepared pans.
- Bake in preheated oven for 35 minutes for round pans, 40 minutes for rectangular pan, 70 minutes for deep-dish square pan ( or until wooden toothpick inserted in center comes out clean).
- Cool for 5 minutes before removing from pan and parchment paper to wire rack.
- Serve warm with ice cream or let cool to room temperature and frost with icing of your choice.
