How to make it

  • Heat oven to 350°F. Line your pan(s) of choice (two 9-inch rounds OR one 13x9x2-inch rectangular OR one 9x9-inch square) with parchment paper. Set aside.
  • In the bowl of a stand mixer sift together the sugar, flour, cocoa, baking soda and baking powder, and add salt. Stir to combine thoroughly.
  • Add eggs, yogurt, coffee, oil and vanilla. Beat on medium speed using paddle attachment for about two minutes; the batter will be thin.
  • Pour batter evenly into prepared pans.
  • Bake in preheated oven for 35 minutes for round pans, 40 minutes for rectangular pan, 70 minutes for deep-dish square pan ( or until wooden toothpick inserted in center comes out clean).
  • Cool for 5 minutes before removing from pan and parchment paper to wire rack.
  • Serve warm with ice cream or let cool to room temperature and frost with icing of your choice.
