How to make it

  • Put the well water and 'redemption' together in a kettle...bring it to a boil.
  • Mean while...back at the range.
  • In a heavy bottomed pot,brown your meat,or,mushrooms over a medium to high flame...but watch it.
  • If you are using bacon,no need for additional fat in the pan.
  • Now...if you'er using sausage,or,mushrooms,then add 2 tablespoons of farm fresh churned butter.
  • Brown,for about 6 minutes,or so,just until the meat is browned to perfection,or,the mushrooms have softend.
  • Place this on a plate...set aside for a spell.
  • In the same pan...with the meat,or,mushroom drippings still inside...cook the 1015 onion until of nice color,about 20 minutes will do quite nicely.
  • Set the sweet aside,with the cooked meat,or,mushrooms.
  • Add the cracked rye to the pan and toast over a nice heat,stirring,until it reaches a aromatic.
  • Stir in the garlic and cook.
  • Turn of your heat,and protect your hands from any potential spattering of sputter.
  • Pour the boiling Redemption and water into the cracked rye,stirring all the while,being very sure you pull up anything stuck to the bottom of the pan,stir in the yukon gold,and salt it.
  • Bring back to a boil,cover,and reduce the heat to a simmer...cook until the rye grits,and potatos are nice and tender,and all the redemption liquid is absorbed...Now remember if the liquid is absorbed and the grits and the yukon gold is not tender,then you will have to add more liquid...but do not stir about,or you will make the grits gooey.
  • Taste for seasoning...salt and pepper if need be.
  • Turn off the heat,cover,and steam for about 15 minutes.
  • Just before serving,stir in the onion,meat,or,mushrooms.
  • Sprinkle with the parsley...this really makes the flavor sparkle...now for the sharp cheese :o)
  • Delicious as a main course...or as a side dish with eggs!
