Manchego Cheese Mashed Potatoes

From my personal Thanksgiving recipes. Manchego is a Spanish cheese with a nutty, mild yet slightly salty flavor, excellent used in a variety of dishes. Hope you enjoy my recipe. Any reliable mashing potato may be used but the buttery yellow color of these yellow ones is eye candy!
Ingredients
- 5 lbs yellow potatoes ( Ex: Yukon Gold ) shopping list
- 1 stick butter or margarine shopping list
- 3 cups shredded manchego cheese shopping list
- dash nutmeg shopping list
- salt and pepper to taste shopping list
How to make it
- Cook potatoes by favorite method
- Mash while hot enough to handle
- Stir in the butter to melt, then the cheese
- Taste for saltiness, adjust as needed
- Add some pepper and nutmeg to taste
