This is such a good recipe. The white shoepeg corn really adds a unique flavor.

Ingredients
  • 2- 15 oz cans whole kernel yellow corn
  • 1- 7 oz can white shoepeg corn
  • 1 small red onion
  • 1 red bell pepper
  • 8 oz snow peas, sliced diagonally
  • 3 tablespoons olive oil
  • salt and pepper to taste

Directions
  1. dice the red onion and red pepper
  2. in a large bowl place all of the salad ingredients together
  3. add the oil and s/p
  4. toss well
  5. enjoy!
