How to make it

  • Foam the butter in a pan,add mushrooms and sweat over a medium heat until they give off moisture.
  • Once the moisture has boiled off,add one cup of good,rich,beef broth...allow it to reduce down,douse the pan with some heavy cream,allow this to reduce down.
  • Set your steak out on the kitchen cabnet or side board to come to about room temperature...keeping in mind that when you place 'cold to hot' on a beef steak,it will toughen it,and you want a buttery,tender,melt in your mouth texture...so let it set out a spell,then salt and pepper.
  • Heat your grill to hot...this is going to be a 2 and 2...Place the steak on the grill and leave it there for two minutes,flip the steak over and cook for two more minutes.
  • I like my steaks,very rare,but if you like yours cooked to medium,then slide the steak over to the lower heat and finish it off for about six to eight more minutes.
  • Either way...you'er goin' to want to lift your steak from the grill,and let it rest,covered loosely with some foil.
  • Top with your smothered mushrooms and...call it a...'Good Day'
