Red Rice With Greens

- 4 medium-large mushrooms, chopped shopping list
- 4 fresh asparagus spears, diced into 2 cm lengths shopping list
- 4-5 florets of broccoli, halved if necessary, part cooked shopping list
- 1 zuccini, diced shopping list
- 4-5 medium spinach or chard leaves, chopped or torn into pieces shopping list
- 1 1/2 cups of red rice (brown would make a reasonable substitute, but I say the colour makes it) shopping list
- soy sauce to taste shopping list
How to make it
- Put rice on to boil.
- In a pan, saute the mushrooms, zucchini and asparagus in a little olive oil. Allow a few mins to soften, and then add a splash of soy sauce (this is to personal preference, our household adores it), along broccoli (best if this is already partly cooked).
- Turn through drained rice and spinach, and add a small splash of water or stock, just for a bit of lubrication.
- Allow it to simmer for a few minutes, until vegetables are pleasantly soft, and serve as is.
