How to make it

  • Put rice on to boil.
  • In a pan, saute the mushrooms, zucchini and asparagus in a little olive oil. Allow a few mins to soften, and then add a splash of soy sauce (this is to personal preference, our household adores it), along broccoli (best if this is already partly cooked).
  • Turn through drained rice and spinach, and add a small splash of water or stock, just for a bit of lubrication.
  • Allow it to simmer for a few minutes, until vegetables are pleasantly soft, and serve as is.
