Cheater's Bar Cookies

Had to come up with some quick bar cookies for a Holiday party. Cut my measuring time down dramatically by converting a cake mix into a bar cookie. I was originally going to make biscotti, but I know the group I'm feeding and crunchy biscotti won't work. Read more ....a chewy bar cookie would be better received. See less
Ingredients
- Basic Ingredients shopping list
- 1 yellow cake mix, generic, no pudding added shopping list
- 1/2 cup of softened butter, no salt shopping list
- 1/2 cup of packed light brown sugar shopping list
- 2 tbsp of liquid of choice shopping list
- 1 large pasteurized egg shopping list
- 1/2 cup of addition #1 choice shopping list
- 2 cups of addition #2 choice shopping list
- Version #1 bourbon Brickle butterscotch Bars shopping list
- subbed Makers Mark bourbon for water shopping list
- 1/2 cup of brickle (Heath brand) shopping list
- 2 cups of buttercotch morsels shopping list
- Version #2 chocolate walnut Dried Cranberry Bars shopping list
- 1/2 cup of chopped walnuts shopping list
- 1 cup of milk chocolate chips shopping list
- 1 cup of dried cranberries shopping list
- Version #3. shopping list
- 2 tbsp fresh orange juice shopping list
- 1/2 cup of chopped pecans shopping list
- 2 cups of dark chocolate shopping list
- Possibilities are endless, shopping list
- lime juice, split equally 3/4 c coconut & 3/4 c white chocolate morsels shopping list
- triple sec, 1/2 slivered almonds and 2c dried apricot slivers shopping list
- bourbon, 3/4 salted cashews, 3/4 milk chocolate shopping list
How to make it
- Preheat oven to 350 degrees
- Grease a 9 x 12 pan with non stick cooking spray
- Cream butter and sugar.
- Add egg, and liquid.
- Stir in additions,
- Batter will be stiff.
- Spread in pan to edges
- Bake 30 to 35 minutes.
- Pictures are version one on the left, version #2 on the right.
- Cool thoroughly before cutting into bar portions.
- Freeze well.
- Moist tender, fragrant delicious.
