Mango Salsa

- 1 ripe mango, peeled, pitted and diced (about 1.5 cups) shopping list
- 1/2 medium red onion, finely chopped shopping list
- 1 jalapeno chili, minced (include ribs and seeds for a hotter taste) shopping list
- 1 small cucumber, peeled and diced (about 1 cup) shopping list
- 3 T fresh coriander (cilantro) leaves, chopped shopping list
- 3 T fresh lime juice shopping list
- salt and pepper to taste shopping list
How to make it
- Combine all the ingredients in a bowl.
- Season to taste with salt and pepper.
- If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado.
