Chicken Souvlaki with a gluten free option

- Chicken: shopping list
- 3 boneless, skinless chicken thigh fillets cut into 2cm strips shopping list
- Marinade: shopping list
- 1/4 cup olive oil shopping list
- 1/4 cup lemon juice shopping list
- 1 tspn oregano shopping list
- Greek Salad: shopping list
- 1/2 head of lettuce, shredded shopping list
- 2 tomatoes, diced shopping list
- 1 red onion, sliced finely shopping list
- 250gm crumbled feta cheese shopping list
- Greek Salad Dressing: shopping list
- 1/4 cup olive oil shopping list
- 1/2 tspn sugar shopping list
- 1/8 tspn oregano shopping list
- 1/4 cup white wine vinegar shopping list
- 1/4 tspn salt shopping list
- 1/8 tspn dry mustard shopping list
- To Serve: shopping list
- Warm pita bread or gluten free tortillas shopping list
How to make it
- Chicken:
- Combine marinade ingredients in a bowl. Place the chicken strips in the marinade and leave for at least one hour or overnight.
- Drain the chicken of most of the marinade and place in a frying pan over medium heat until they are browned and the marinade has reduced.
- Remove from the pan and drain on kitchen paper, set aside and allow to rest while preparing the salad. This will retain the juices in the meat.
- Salad:
- Combine all dressing ingredients and set aside.
- Combine the salad ingredients.
- Dress the salad, tossing gently.
- Add the chicken strips.
- To Serve:
- Serve as a salad with warmed pita bread as an accompaniment or use the pita bread, opened, and fill with the Souvlaki to have as a sandwich. If using gluten free tortillas, use as a wrap.
