Spinach Cakes

- 3 10 oz packages frozen spinach, well drained shopping list
- 5 slices hickory smoked bacon, small diced shopping list
- 1 medium to large onion, small diced shopping list
- 3/4 cup sliced mushrooms shopping list
- 2 cloves garlic minced shopping list
- 3/4 cup panko bread crumbs shopping list
- 3/4 cup grated parmesan cheese shopping list
- 2 eggs slightly beaten shopping list
- 1/2 tsp blk pepper shopping list
- 1/2 tsp ground thyme shopping list
- cracker crumbs or more panko for rolling the cakes before frying shopping list
How to make it
- Saute bacon until brown.
- Remove bacon from fat.
- Add onions to bacon fat and saute until lightly brown, add garlic and mushrooms and sweat.
- In a large bowl add spinach, bacon, the ingredients in the hot pan including the fat and the remaining ingredients and mix well.
- If the mix is too runny add more panko or parmesan cheese. If it is too dry add another egg or just a little cream or chicken stock.
- Shape into 1 to 2 oz cakes and roll in cracker crumbs or panko and fry in a medium heat pan for about 3 minutes per side. Or you could shape into balls and coat with crumbs and deep fry.
- How about putting a little cream cheese in the middle of the ball ? then coat and deep fry? WOW! I'm gonna try that!
- If you try it before I do, let me know how it goes.
- I guess they could be called "Spinach Poppers"
