How to make it

  • Saute bacon until brown.
  • Remove bacon from fat.
  • Add onions to bacon fat and saute until lightly brown, add garlic and mushrooms and sweat.
  • In a large bowl add spinach, bacon, the ingredients in the hot pan including the fat and the remaining ingredients and mix well.
  • If the mix is too runny add more panko or parmesan cheese. If it is too dry add another egg or just a little cream or chicken stock.
  • Shape into 1 to 2 oz cakes and roll in cracker crumbs or panko and fry in a medium heat pan for about 3 minutes per side. Or you could shape into balls and coat with crumbs and deep fry.
  • How about putting a little cream cheese in the middle of the ball ? then coat and deep fry? WOW! I'm gonna try that!
  • If you try it before I do, let me know how it goes.
  • I guess they could be called "Spinach Poppers"

    Well, I finally tried the cream cheese filling idea. It was ok but I liked them better as the original recipe. Don't really care for the bread crumb coating either but it could be because I used a different brand of bread crumb.
