Zucchini Eggplant Melange

- 6 small young thin zucchini, cut in rounds shopping list
- 1 medium eggplant washed and unpeeled and cubed shopping list
- 1/2 cup grated cheese of choice ( cheddar , mozzarella etc. ) shopping list
- 1-2 cups of favorite spaghetti sauce shopping list
- seasonings: shopping list
- garlic, salt, pepper, smoked paprika shopping list
- Optional: chopped parsley or basil etc shopping list
How to make it
- Cook the egg plant and zucchini ( plus other additions such as cooked, sliced mushrooms, onion, bell peppers etc ) as desired
- Drain off excess liquid
- Gently mix in cheese to melt along with desired amounts of spaghetti sauce and seasonings to taste
