How to make it

  • Cook the egg plant and zucchini ( plus other additions such as cooked, sliced mushrooms, onion, bell peppers etc ) as desired
  • Drain off excess liquid
  • Gently mix in cheese to melt along with desired amounts of spaghetti sauce and seasonings to taste

    Great post Midgelet. This combo would be great sans the spaghetti sauce and just some butter or maybe hollandaise sauce. Never thought of a zucchini/egg plant combo but it's a natural. RJ
