Thai Curry Fish Soup

- 1 1/2 lbs filet of fish cut into small chunks ( use any combo you like. I used haddock and halibut, mild white type of fish ) shopping list
- juice from 2 fresh limes shopping list
- 2 garlic cloves fine chopped shopping list
- 3 plum tomatoes coarse chopped shopping list
- 1 large onion sliced shopping list
- 1 Tbs grated fresh ginger root shopping list
- 1- 2 large keffir lime leaf ( available in Asian markets ) shopping list
- 1 can coconut milk( not coconut cream ) shopping list
- 1/2 can water or fish stock ( or use fish or lobster bouillon with the water shopping list
- 1 Thai chili sliced ( or whatever chili pepper and how many you like for the heat ) shopping list
- 1 tsp salt or more to taste shopping list
- 3 Tbs favorite brand of curry powder shopping list
How to make it
- Combine all ingredients:
- For pressure cooker: time for 5 minutes one pressure achieved
- For slow cooker, place all in cooker, cook low about 3 to 4 hours or everything is tender
- For stove top, bring all to boil, cover and simmer till tender about 20 minutes or everything tender
- Correct seasonings as desired
- This soup may be served in a bowl containing some cooked white or brown rice if desired
