Cauliflower With Garlic And Archovies Recipe
Unique side dish that is easy to make and always a hit with company. Goes great with fish or grilled tofu. Also a big hit in our house. Alternative: Toss with pasta to be the main dish.

Ingredients
  • 1 head cauliflower
  • 4 Tblsps extra-virgin olive oil
  • 2-10 anchovy fillets (add to taste)
  • 1 Tblsp minced garlic
  • 1 tsp crushed red pepper
  • minced fresh parsley leave for garnish (optional)

Directions
  1. Steam the cauliflower florets for about 20 minutes or until tender. When it is done place in cold water bath to stop it cooking and set aside.
  2. Combine oil, anchovies, garlic and crushed red pepper in deep skillet.
  3. Turn heat under skillet to medium low.
  4. Cook, stirring occasionally, until the anchovies begin to break up and the garlic begins to color, about 5-6 minutes.
  5. Add cooked cauliflower to skillet and raise the heat to medium-high.
  6. Continue to cook until the cauliflower is coasted with oil and heated through, about 5 minutes.
  7. Garnish with fresh parsley and serve.

I use a lot less oil since the fish are packed in it... if you like the nutty flavour the fish takes on I def reccommend using the anchovy oil instead too. Also the cauliflower should only be cooked at MOST 13-14 minutes... 20 turns it to bitter mush.
