How to make it

  • Cut the stem of the artichoke to about 3/4 of an inch. Cut off tops and trim remaining leaves of the artichoke. In a small saucepan add artichoke and cover with water, salted slightly. Bring to a boil and let sit for 10-15 minutes.
  • In the meantime, preheat oven to 350.
  • Combine all ingredients, using only 1/4 cup of beer. Once artichoke is tender, remove. Let cool slightly for easy handling. Open artichoke so stuffing can easily go in between the leaves. Once all the stuffing is in the artichoke, place in a shallow dish, adding the remaining beer to the bottom. Bake for 15 - 20 minutes until the top is browned.
  • Serve with melted, drawn butter.
