How to make it

  • Mix all the ingredients except the chicken together with a whisk. Add the chicken making sure all pieces are coated. Cover and let it marinade in the refrigerator. (Overnight would be great, but I've done it as short as 30 minutes.)
  • Bake on a parchment covered baking sheet (pouring the extra marinade ontop of the chicken) at 400 for 45 minutes, then turn the chicken and lower the heat to 275 for another 15-20 minutes.

    We have Hospice here at home right now -- things are hectic and I didn't make it to the store. I didn't have pancake mix, so I used rice flour and gluten-free cornbread mix and mixed it up the same way. It was actually crisper than before -- I didn't get a chance to turn it part way though, and it didn't make a difference at all. I actually accidently pulled out a small package of pork chops with another small package of chicken and didn't discover my mistake until I had them thawed and ready to coat. -- Worked wonderful on the chops, too!

    I just made this again today and it turned out even better! I added parsley to the batter and cooked the chicken the entire time at 400, even after I flipped it. This is the dish I would make if I had to impress someone!! I served it with baked sweet potatoes, buttered peas and cherry salad!
