Panko And Dill Crusted Cod Recipe
Baked encrusted fish that is light, low fat, and super tasty.

Ingredients
  • 1 cup panko breadcrumbs (regular breadcrumbs if you can't get panko)
  • 3-4 Tblsps chopped fresh dill
  • grated lemon peel of 1 lemon
  • 12oz cod fillet, quartered
  • 4 Tblsps butter, melted
  • Salt and pepper
  • lemon wedges

Directions
  1. Preheat oven to 425
  2. Place breadcrumbs, dill, and lemon peel in food processor and grind coarse mixture
  3. Transfer crumb mixture to plate.
  4. Sprinkle fish with salt and pepper and brush with melted butter.
  5. Roll fish in crumb mixture, coating completely.
  6. Arrange fish on baking sheet lined with parchment paper (baking dish is fine).
  7. Bake fish until crumb crust in golden and fish is just opaque in center, about 15 minutes.
  8. Garnish with lemon wedges.
