Panko And Dill Crusted Cod

- 1 cup panko breadcrumbs (regular breadcrumbs if you can't get panko) shopping list
- 3-4 Tblsps chopped fresh dill shopping list
- grated lemon peel of 1 lemon shopping list
- 12oz cod fillet, quartered shopping list
- 4 Tblsps butter, melted shopping list
- salt and pepper shopping list
- lemon wedges shopping list
How to make it
- Preheat oven to 425
- Place breadcrumbs, dill, and lemon peel in food processor and grind coarse mixture
- Transfer crumb mixture to plate.
- Sprinkle fish with salt and pepper and brush with melted butter.
- Roll fish in crumb mixture, coating completely.
- Arrange fish on baking sheet lined with parchment paper (baking dish is fine).
- Bake fish until crumb crust in golden and fish is just opaque in center, about 15 minutes.
- Garnish with lemon wedges.
