Carrot & Coconut Truffles

- 1 kg grated carrot shopping list
- 500 gms confectioners sugar shopping list
- 80 gms Dessicated coconut shopping list
- some raisins or crushed walnuts ( opt) shopping list
- orange zest of 3 large oranges or shopping list
- 2 tsp of vanilla essence shopping list
- a pinch of salt shopping list
- few small cup cakesor truffle wrappers shopping list
How to make it
- In an heavy bottom pan add grated carrot confectioners sugar orange zest or vanilla together n on high heat cook till carrot water is completly absorbed n has changed its colour ... this will take around 20-25 min but keep stirring n dont let carrots stick to the bottom of the pan..add a pinch of salt n raisin while cooking
- Once done switch off the flame n let it cool down for atleast 10 mins then add 60 grams of dessicated coconut n crushed walnut if u like and mix well with hands ... in a small bowl take 20 grams of dessicated coconut .. start making small balls n roll one time in the dessicate coconut which is in the bowl then put it in wrappers ...
- Ready Serve !!!!

- Tip :
- There are many ways to make this truffle i prefer this way as it more easy n convient ....
- If u dont have orange available u can always add vanilla essence
- I prefer to make this truffles in orange flavour i really liked it ....
- Adding raisins or walnut is totally upto n ofcourse how sweet u perfer is again upto ....
- I had no counts of truffles as i was making it my husband started eating well this should make if not mistaken around 20 truffles ....
