Fig Chutney

- figs - 500 gms, dried, blanched for 10 minutes shopping list
- almonds - 4 tbsp, blanched for 10 minutes shopping list
- vegetable oil - 1/2 cup shopping list
- onions - 1/3 cup, chopped shopping list
- garlic - 3/4 cup, chopped shopping list
- ginger- freshly grated, 3 tsp shopping list
- sugar - 1 tbsp shopping list
- Cayenne pepper- 1 tsp shopping list
- Green Chillies - 4 to 5, chopped shopping list
- salt to Taste shopping list
- malt vinegar - 3 1/2 tbsp shopping list
- white vinegar/apple cider vinegar - 5 tsp shopping list
- Green cardamom powder - 2 tsp shopping list
- melon Seeds - 2 tsp shopping list
How to make it
- Heat the oil in a pan.
- Fry the onions and garlic until golden brown.
- Remove and keep aside.
- Combine all the ingredients (except the green cardamom powder and melon seeds) and blend to a fine paste.
- Transfer the paste into a bowl and garnish with green cardamom powder and melon seeds.
- Refrigerate and use as required.
