Vegie Bolognese

- 1 large carrot diced shopping list
- 3 stalks of celery diced shopping list
- 1 large onion diced shopping list
- 4 cloves of garlic minced shopping list
- olive oil shopping list
- 1 28 oz can of diced tomatoes shopping list
- 1 tbsp of tomato paste shopping list
- 1/2 tbsp of dried oregano shopping list
- bout a cup of merlot shopping list
- 2 tsp salt shopping list
- 2 tsp w sugar shopping list
- 1 tsp black pepper shopping list
- bout 15 large leaves of fresh basil, chopped. shopping list
- rigatoni, cooked to directions shopping list
- freshly grated parm, shopping list
How to make it
- cook first four ingred in olive oil coated pan for about 10 minutes at medium heat. Stir often and add more olive oil if pan goes dry. Add 1/2 cup melot and reduce till half. Add tomatoes, paste, oregano, salt, pepper, and sugar. cook 15 munutes on med high heat, stirring often. Add 1/2 cup melot, Simmer bout 3 minutes. Add chopped basil. Stir. Add to cooked pasta. Add as much cheese as you like.
- I also added fresh basil at the end.
