Apple Puzzle Dessert

- First of all, I knew whole apples would be too tall and would not cook properly in that short time period of 30 minutes. So I cut the apples in half. Even after 30 minutes the apples were not tender. I did not want to use a pie pastry recipe for longer baking because the biscuit dough absorbed some the syrup and most pie doughs would not do that. shopping list
- So in my second attempt I decided to precook the apples till almost tender and that did the trick! One can use their micro to partially cook the apples. shopping list
- Another change is that I prepared the biscuit dough differently but the end results were the same. shopping list
- apples and syrup shopping list
- 3 medium apples, , peeled ,cored, sliced horizontally in half and poached or cooked in the micro till almost tender and drained shopping list
- 3/4 cup packed light brown sugar shopping list
- 6 tablespoons water shopping list
- 2 tablespoons unsalted butter shopping list
- 1/2 tablespoon vanilla extract shopping list
- 1/8 teaspoon salt shopping list
- Buscuit Dough shopping list
- 1 1/4 cups all-purpose flour shopping list
- 2 tablespoons granulated sugar shopping list
- 1 tablespoon baking powder shopping list
- 1/4 teaspoon salt shopping list
- 5 tablespoons butter , cut into 1/4-inch pieces and chilled shopping list
- 6 tablespoons cold milk shopping list
How to make it
- Arrange apples cut side down, rounded side up, around a 10 inch pyrex or similar pie plate/dish and microwave till apples partially soft tender
- Drain offf any liquid and let apples and dish cool completely or at least till warm because you don't want to pace the dough over hot fruit.
- Place a 6 oz glass or Pyrex custard cup in center of pie plate , top down,surrounded by the cooked/cooled apples
- Adjust oven rack to middle position and preheat oven to 400 degrees.
- Meanwhile, combine brown sugar, water, butter, vanilla, and salt in medium saucepan and stir over medium heat until sugar dissolves and butter melts, about 5 minutes.
- Pour syrup over prepared cooled apples in prepared pie plate
- Make the dough:
- Combine dry ingrdients, cut in pieces of cold butter until cornmeal consistency.
- Using a large fork, gradually add milk and mix until dough sticks together as one would make for biscuits.
- Roll dough out in a circle with a rolling pin on a sugared surface- my additional instruction
- Lay circle of dough directly over apples and press/tuck dough so that it fits snuggly around apples.
- DO NOT ATTACH DOUGH TO PIE PLATE.!!!!
- Bake in oven until top is golden brown, 25 to 30 minutes.
- Cool on rack for 30 minutes.
- To Serve:
- Place a large rimmed serving plate over top of pie plate and carefully but quickly invert baked Puzzle onto plate.
- Cut warm dessert into wedges around each apple and serve, pouring syrup from custard dish over each portion.
- Optional: ice cream and or whipped cream too!
- And this also tasted great cold!
