Black Beans And Rice Salad Recipe
This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Rodgers Estate in Bonham, Texas in 1992.

Ingredients
  • 1/2 cup long-grain white rice
  • 1-1/2 cups canned black beans drained
  • 1/4 cup chopped fresh parsley
  • 1/2 medium red onion chopped
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons olive oil
  • 2 tablespoons chicken stock
  • 1 teaspoon prepared Dijon-style mustard
  • 1 tablespoon lemon juice

Directions
  1. Cook rice as usual and rinse to cool then drain well.
  2. Add beans, parsley, onion, salt and pepper.
  3. Whisk together remaining ingredients and pour over salad and toss well.
  4. Serve cold.
