Honey Cornflake Cupcakes

A childhood memory prompted a web search. Pretty much all the recipes wanted cocoa but I adapted this one from many... A hit with my guests, served with lemon curd yoghurt from the Piako dairy company. If you don't live in NZ you will never know how good that is!
Ingredients
- 75g unsalted butter shopping list
- 75g sugar (any sort, no need to be fussy) shopping list
- 2tbsp good runny hunny shopping list
- About 2 cup of cornflakes shopping list
How to make it
- Put cornflakes in a big mixing bowl
- Melt all other ingredients together over low heat
- Once melted, bring to boil just for a bit. Keep on stirring!
- Pour melt over flakes and mix
- Distribute between 12 little cupcake slots on a muffin tray. I use silicon moulds to help with the washing.
- Bake just ten minutes at 180c and leave to cool. They don't look like they will set but they do. Use the mould as the runny hunky mix settles a little and gives you a great base.
- Serve or just eat!
