Classic Italian Arugula Salad

- ~5 oz. arugula, washed shopping list
- 1 lemon shopping list
- extra virgin olive oil (EVOO) shopping list
- parmesan cheese, preferably Reggiano. Shaved. shopping list
- salt - again, high quality salt makes a difference in this one shopping list
How to make it
- Put the arugula in a bowl.
- Squeeze lemon juice to taste over the greens.
- Add some nice EVOO.
- Add salt to taste, and toss everything together.
- Plate the salad, and put the shaved Paremesan Reggiano on top.
- Voila! The perfect blend of bitter, salt, sour, and pepper.
- You could jazz this salad up by adding pear slices, pine nuts, and/or dried cranberries. But for me, why mess with perfection?
