How to make it

  • Put the arugula in a bowl.
  • Squeeze lemon juice to taste over the greens.
  • Add some nice EVOO.
  • Add salt to taste, and toss everything together.
  • Plate the salad, and put the shaved Paremesan Reggiano on top.
  • Voila! The perfect blend of bitter, salt, sour, and pepper.
  • You could jazz this salad up by adding pear slices, pine nuts, and/or dried cranberries. But for me, why mess with perfection?
