Chicken Fritada Recipe
The is an easy Filipino dish prepared within an hour. Serve with a moundful of steamed rice.

Ingredients
  • 1 small yellow onion, minced
  • 4 garlic cloves, rough chopped
  • Olive oil, enough to cover the bottom of the pan
  • 1 1/2 - 2 lbs of chicken pieces, cut up in small portions, about 2-3 inches
  • S & P
  • 1 8-oz tomato sauce
  • 1 cup of chicken broth
  • 2 bay leaves
  • 1 lb Yukon Gold potatoes, cut in 1/4-inch rounds
  • 1 large green pepper, cut into short ,thin strips
  • 1 cup frozen pearl onions
  • 1/2 c manzanilla olives
  • 1 cup frozen green peas
  • 1 tbsp soy sauce
  • Chopped parsley, garnish

Directions
  1. Wash and dry chicken pieces. Season with S & P.
  2. Add some olive oil to a large, heated saute pan or a casserole pan, over medium-high heat.
  3. Saute onions for about 2 minutes. Add chicken pieces and brown all sides. Then add chopped garlic and bay leaves. Continue stirring, careful not to burn garlic pieces.
  4. Slowly pour in tomato sauce and broth. Bring to a boil. Cover and reduce heat to a simmer for about 30 minutes.
  5. Add in the rest of the ingredients: potatoes, pepper, pearl onions, olives,peas and soy sauce. Simmer for another 10 minutes, until potatoes are cooked through. The sauce should have thickened slightly.
  6. Season with S & P, to taste. Serve hot and garnish with chopped parsley.
