How to make it

  • Wash and dry chicken pieces. Season with S & P.
  • Add some olive oil to a large, heated saute pan or a casserole pan, over medium-high heat.
  • Saute onions for about 2 minutes. Add chicken pieces and brown all sides. Then add chopped garlic and bay leaves. Continue stirring, careful not to burn garlic pieces.
  • Slowly pour in tomato sauce and broth. Bring to a boil. Cover and reduce heat to a simmer for about 30 minutes.
  • Add in the rest of the ingredients: potatoes, pepper, pearl onions, olives,peas and soy sauce. Simmer for another 10 minutes, until potatoes are cooked through. The sauce should have thickened slightly.
  • Season with S & P, to taste. Serve hot and garnish with chopped parsley.
