How to make it

  • 1. Chop garlic cloves and ginger in long thick strands.
  • 2. In a casserole, mix all ingredients for the spiced chicken. Make sure the sugar is well dissolved.
  • 3. Arrange chicken leg quarters in a pot then add the mixture. Simmer over medium heat for 30 minutes or until chicken is cooked through.
  • 4. Prepare salted fish rice. See separate recipe.
