Crabby Udon With Crab Meatballs

- For the noodle broth : shopping list
- 1 -1/4 cup water shopping list
- 1/4 cup Aji mirin shopping list
- 2 tbsp soy sauce shopping list
- 12 Dried & seasoned Mini crabs shopping list
- about 1/2 cup or one big handful of Dried Konbu Seaweed pieces shopping list

- a few drops of Veggie oil shopping list
- one 10oz package of dry Udon shopping list

- For the crab meatballs : shopping list
- one 6oz can crab Meat shopping list
- 1 small green onion (chopped) shopping list
- 1 Egg shopping list
- 1 cup panko breadcrumbs shopping list
- 1 tbsp sesame seeds shopping list
- 1 tsp salt shopping list
- 1 tsp ground black pepper shopping list
- 1 tsp Chinese 5 spice shopping list
- 1 tsp paprika shopping list
- pinch Ground lemon peel / Zest shopping list
- 1 tbsp sake shopping list
- 1 tbsp sesame seed oil shopping list
- ! tbsp olive oil shopping list
How to make it
- 1.MEATBALLS
- Preheat the oven to 350 degrees F. Drain the can of crab meat and combine everything but the egg in a medium sized bowl. Beat the egg then fold in with the rest of the mixture.
- Grease a small baking pan. Roll a baker's dozen meatballs and place evenly on pan with plenty of space around each. Loosely cover with aluminum foil and bake for 15 - 20 minutes.
- 2. UDON NOODLES
- Fill a large pot with water, add the salt, and bring the water to a boil. Add the udon noodles and a few drops of oil. Stir occasionally.
- Let water come to a boil again. Cook noodles for 5 minutes while water is boiling. Drain into colander and rinse with cool water.
- 3. NOODLE BROTH
- Combine all the ingredients except for the Konbu and let simmer on Low in a small pot for 15 minutes. Add the Konbu and bring the mixture to a boil for another 20 minutes or until the Konbu is soft, stirring occasionally.
- 4. To plate, place noodles in bowl first, add desired amount of the broth, and stir them together. Place the meatballs on top.
- 5. [a side note] The crab meatballs by themselves plus a mayonnaise-based dipping sauce would be good as an appetizer or a tray at parties.
