Use leftover salad to make great open face sandwiches for lunch the next day,

Ingredients
  • Left over tomatoes, onions and cucumbers marinated in garlic balsamic vinaigrette (balsamic vinegar, mustard, olive oil, garlic)
  • six inches stale baguette split and hollowed
  • 2 pieces sliced provolone cheese

Directions
  1. Split bread long ways and hollow out slightly
  2. Add leftover salad
  3. top with one slice provolone for each piece of bread
  4. broil until cheese is bubbly and bread is crusty
