This And That Macaroni Salad

Had a little tuna left in the fridge from making sandwiches but not enough to make another one. I added it to a macaroni salad concoction from a little of this and that. I threw this together so the ingredients were not measured exactly. Read more Feel free to add more or not add to suit your taste. I personally like lots of crunch. See less
Ingredients
- 1/2 box elbow macaroni, prepared according to package instructions and cooled shopping list
- 2-3 tbls. white albacore tuna, broken up shopping list
- 2 scallions, chopped shopping list
- 2 stalks celery, diced shopping list
- 2 radishes, diced shopping list
- yellow pepper, diced shopping list
- tomato, diced shopping list
- cucumber, diced shopping list
- salt and pepper to taste shopping list
- I used a combo of 2/3 mayo and 1/3 sour cream for dressing...Use enough to suit your taste shopping list
How to make it
- In large mixing bowl, add all ingredients
- Chill for at least an hour before serving
- ***The macaroni will absorb the dressing so feel free to add more if desired***

It tasted better the next after being in the fridge overnight. I bumped up the ingredients and I used Ditalini pasta so that the pasta wouldn't be so overwhelming.
